Creamy Jamaican Jerk Chicken

Try this I promise you will not be disappointed. It is so delicious and healthy! Here’s the recipe:

  1. 2 deboned chicken breasts cut up in pieces
  2. 2  deboned chicken legs cut up in pieces
  3. 2 tbsp avocado oil (or any other oil you like cooking with)
  4. 2 shallots
  5. 2 tbsp of Jamaican jerk spice mix (see recipe below)
  6. 2 tbspn olive oil
  7. ¼ cup orange juice
  8. ½ cup bone broth (or water)
  9. ½ cup coconut milk (the one from the can)
 

Jamaican jerk seasoning mix:

1 part nutmeg
1 part ground cloves
1 part cinnamon
½ part cayenne
2 parts salt
2 parts pepper
2 parts allspice
2 parts garlic powder
3 parts thyme (grinder to powder)
3 parts onion powder

Put the cut up chicken in a bowl and mix with the spice blend and 2 tbsp of oil. Let sit while you prepare all your other ingredients. Finely dice the shallots and sauté in a shallow pan. When the shallots are translucent, add the chicken and sauté on medium-high until nicely browned.  Deglaze with orange juice and add bone broth. Let simmer until the liquid have reduced and become thicker. Add in the coconut milk and cook for an additional 5 minutes. Serve with your favorite roasted vegetables.
