Passover Chocolate Chip Cookies

During the eight of passover, we refrain from eating any leavened food products (flour, bread, pasta...) so you can imagine that baking can be a challenge. But yet, I don't think there is any other period of the year during which I bake more than passover. All the kids are home, we get together with family and most of what we do is eat. Needless to say that I have developed some pretty cool dessert recipes like this chocolate and praline layer cake or these truly UH-MAZING chocolate chip cookies. Here's the recipe in weights cause that's how I bake (no dishes and super easy check out this post to see why) and in metric cups (cause I know that's how a lot of you bake). Try them I just know you'll LOVE them!

Passover Chocolate Chip Cookies

6 g baking soda (1 tsp)
6 g salt (1 tsp)
160 g matzo cake meal (about 1 1/8 cup)
95 g potato starch (about 1/2 cup + 1 tbsp )
200 g oil (1 cup)
215 g brown sugar (1 cup)
100 g sugar (1/2 cup)
1 splash vanilla essence (1 tsp)
2 eggs
chocolate chips to taste
 

Preheat oven to 375 F.

Mix all the dry ingredients (baking soda, salt, cake meal, potato starch) together and set aside. Whip with a mixer the sugars, oil and vanilla until well combined. Add the eggs and continue mixing until you get a creamy mixture. Add the dry ingredients in two increments. Mix in the chocolate chips.

Line  cookie sheet with parchment paper. Drop the cookie dough batter by the spoonful making sure to space them out because they spread. Bake for 8 minutes and let cool down completely before handling.
